When Julia visited us in our office in Mannheim for the photoshoot of her Universe jewelry pieces she made a poke bowl with us. Julia loves to create healthy yet yummy dishes that make our bodies and souls happy.   

First Things First: What Is a Poke Bowl?

Poke bowls originate in Hawaii and are a favorite dish for many islanders. The native Hawaiian fishermen sliced up the freshly caught reef fish and marinated the pieces with whatever was on hand (like sea salt, local nuts, or seaweed). That’s also where the name comes from as it's the Hawaiian word for cutting something into pieces.

By now the whole world knows and loves poke bowls. You can get them with various ingredients, topped with fish, colorful veggies, or whatever you like. Together with @itsonlyme.julia we prepared a delicious poke bowl and – of course – wanted to share the recipe with you. Adjust it to your liking by using your fave veggies, marinated tofu, fish, or else. 

Let’s start! 

Servings: Serves 2
Ingredients:

  • 150 g Basmati rice
  • 1 mango, diced 
  • 1 carrot, cut into stripes
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 3 radishes, sliced 
  • 100 g edamame (you can often find them feezed in your supermarket)

Sauce:

  • 100 g tahini
  • Juice of ½ lemon 
  • 1 garlic clove, minced
  • 100 ml water

Toppings: 

  • Seasalt 
  • Parsley, chopped
  • 1 tsp. black sesame seeds
  1. Cook the rice according to the instructions on the package and let it cool down. 
  2. Wash the vegetables. Slice & dice them into strips and pieces. Cut the mango into cubes. Wash the parsley. 
  3. Whisk tahini, water and lemon juice together in a bowl. Press the garlic into it and whisk again.
  4. Put rice into two bowls. Arrange the chopped veggies, edamame and mango nicely on top of the rice.
  5. Sprinkle sea salt on top and drizzle the sauce over your poke bowl. Top it with some parsley and black sesame seeds. Enjoy!
